- Green Tea: keep your green tea fresh
The early spring picked green tea can give you a very original and fresh taste, but if the principles were not followed, the freshness and the fragrance will be destroyed, and bitterness will be released as well.Generally, we use less amount of green tea than other types of tea. 3g green tea is enough for Gaiwan brewing. It’s better brewed by 85℃/185℉ water and steeped for 10 seconds. The amino acid and the fresh sweet taste will be extracted quickly. For green tea, the first brews are usually the best.
- Black Tea: Pay attention to time and water temperature
Generally, we put more black tea, which is about 5g for Gaiwan brewing. The first brew is about 3-5 seconds and pour the water out quickly. Draining the tea soup to avoid affecting the taste of the next brew.
The second brew time is same as the first brew. From the third brew, the steep time can be extended for a few seconds to have more fragrance released.
Normally we use 90℃/194℉ water to brew black tea. If your black tea is very high quality such as Yunnan Ancient Tree Black Tea, we suggest using 100℃/212℉ water to brew out the rich minerals quickly.
- Oolong Tea: Rich fragrance
The fragrance is the feature of oolong tea. We suggest using Gaiwan or Zisha clay pot with boiling water brewing oolong tea to get the rich fragrance. For rock oolong tea such as Da Hong Pao, just steeping for 15-20 seconds. But for milk oolong tea such as Tie Guan Yin, we can steep it longer for the first brew, waiting for the tea leaves to be expanded to enjoy the fully released fragrance in the next brew. We suggest using white porcelain tea wares for oolong tea.
- Puerh Tea: Rising tea is important
The most important step of brewing pu erh tea is to wake up tea: pour boiled water into teapot. After 10-20 seconds, pour the water out and not drink it. From the second brew, the mellow flavor of the pu erh tea will be brought out. The time of rising tea should not be too long, otherwise, the flavor will be lost.
We recommend using boiling water and Gaiwan to brew pu erh tea, wait for a 20 seconds steep to enjoy, and increase the steeping time for 5 seconds for every subsequent steep.

Ancient tree black tea is uses fresh leaves of ancient wild tea tree leaves as raw material, the tree age normally is over 200 years. The older tree get the deeper root and rich in minerals.So it makes the flavor so unique.
The normal black tea is tighter and thinner. It has a slight sour taste and sweetness is not obvious. It will be tasteless after 9-10 brews. The ancient tree black tea leaves are softer, bigger, longer and more fuzz. It should be brewed at least 15 times before the flavor begins to fade. The color of the soup is bright, clear and shiny, strong and long-lasting fragrance and strong honey smell.
Brewing Instruction:
• 1. Put 4-5 gram leaves into teapot or Gaiwan
• 2. Fill the glass cup with 200 ml( 6.5oz), 95C (203F) water.

Authentic JinJunMei black tea is fit and tight, each bud color is black with golden hairs. Fake JinJunMei tea mostly dry and the whole body is golden color Or completely black buds mix with golden buds. Those fake JinJunMei tea obviously is mixed with different regions of different varieties of tea.
Brewing
Use boiling water brew JinJunMei can be easily distinguished the real JinJunMei or not. The authentic JinJunMei grows in high altitude mountain and really slow growth cycle makes it resistant to high temperature water, so brewing authentic JinJunMei can continuously brewing 8-12 times, and the quality is still stable, the color and aroma of soup are still sustained.
Soup color
The color of the soup should be golden, and crystal clear from authentic JinJunMei tea, but the fake JinJunMei soup color is muddy and red.

When you cold brewing the jasmine tea, the tea leaves should be made with more hot water than usual, you also can use a special tea bag. The water is best served by pure water, Generally, 10 to 15 grams of tea leaves is needed for every 1000 ml of water. Put the tea leaves in the bottom of the pot, fill in the cold water and place at room temperature for 3-4 hours. Or put it in the fridge and wait for 6-8 hours before filtering out the tea leaves. Then enjoy the elegant fragrance, sweet and mellow taste with cold brew. If you like to add some other flavors, you also can add a little honey or lemon juice.

some people think jasmine tea come from jasmine flower, but it doesn't. jasmine tea use green tea as base tea and scented with fresh jasmine flowers. the process is really labor intensive, so what they do is they take good quality green tea spread it out on a clean ground, because the jasmine flower only bloom at night.so the labors need to go out and pick many many jasmine flowers, then spread those flowers above the green teas for overnight. next morning, the labor need to pick up every jasmine flowers, the process need to repeat 3 or 5 times, some really good quality jasmine tea need to repeat 7 times. so after those produces, the green tea will have really nice powerful jasmine aroma.
